Coating

  • 1 1/4 cups dark chocolate
  • 1 tbsp coconut oil

Filling

  • 1 cup peanut butter
  • 3 tbsp maple or rice syrup
  • 3 tbsp coconut oil
  • 1/4 tsp salt
  • 1 cup roasted peanuts

Base

  • 2 1/2 cups almond flour
  • 2 1/2 tbsp maple syrup
  • 3 1/2 tbsp coconut oil
  • 1/4 tsp salt

Instructions

Step 1: Prepare the Base

  • In a medium bowl, combine all ingredients for the base (almond flour, maple syrup, coconut oil, and salt). Stir until well combined.
  • Press the mixture into a lined 8-inch square baking dish to form an even layer. Place it in the freezer while you prepare the other layers.

Step 2: Make the Filling

  • In a separate bowl, whisk together the peanut butter, maple syrup, coconut oil, and salt until smooth and creamy.
  • Pour this peanut butter mixture over the frozen base, spreading it evenly. Sprinkle roasted peanuts on top of the filling. Freeze for about 1 hour until firm.

Step 3: Prepare the Chocolate Coating

  • Melt the dark chocolate and coconut oil together in the microwave for 30-45 seconds, stirring until smooth.

Step 4: Assemble the Snickers Bars

  • Once the peanut butter filling has set, remove the tray from the freezer and carefully cut it into 12 individual bars.
  • Dip or drizzle each bar with the melted chocolate, ensuring it’s well-coated. Place the bars back in the freezer until the chocolate hardens.
